Once I'm in shape do I still need a structured regimen?

My plan is to have a structured meal plan and exercise regimen until I reach my goal weight and then once I am there focus on listening to my body and eating only when I feel hungry. I won't have an exercise regimen other than being active as much as possible everyday doing different things. I eat a raw vegan diet. Does this sound like it will work?
